Bean soup isn’t really a summer dish, but a few weeks ago I needed something easy to make on a day when my husband and I had to eat dinner at different times. He had an evening meeting and needed to eat before he went. My late afternoon meeting meant that I wouldn’t be able to have supper until after he had left. I had to prepare something he could dish up quickly without me.
So around noon, I threw the following ingredients into our crock-pot:
2 cans of Bush’s northern white beans
1 pound of kielbasa sausage, sliced
1 onion, chopped
1 can of diced tomatoes (with basil, garlic & oregano — but if you don’t have the seasoned variety, use unseasoned and add some Italian spices)
I didn’t add any liquid to the crock-pot, just relied on what came from the canned goods.
I set the crock-pot on high. When the mixture reached boiling, I turned it down to low, and let it simmer until each of us was ready to eat. We ate it with Italian bread and fruit.
Voilà—dinner! A thick and hearty soup.
It was really good—as good as soups I make with the beans soaked overnight, and those meals take advance planning.
